Vegan Recipe
Vegan Chicken Soup
Ingredients (Serves 4–6)

2 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

2 carrots, diced
-
2 celery stalks, diced

8 cups vegetable broth
-
1 cup shredded vegan chicken substitute or young jackfruit (optional)

1 1/2 cups egg-free noodles (or broken spaghetti)

1 tsp dried thyme
-
1/2 tsp turmeric (adds color similar to chicken broth)

1 tbsp nutritional yeast (optional for savory flavor)

Salt and black pepper to taste

2 tbsp fresh parsley, chopped
-
Juice of 1/2 lemon (optional for brightness)
Instructions
1. Sauté the Vegetables
Heat olive oil in a large soup pot over medium heat.
Add onion, carrots, and celery and cook 5–6 minutes until softened.
Add garlic and cook 1 minute until fragrant.
2. Build the Broth
Pour in the vegetable broth and stir in thyme, turmeric, nutritional yeast, salt, and pepper.
Bring to a gentle boil and simmer 10 minutes so the vegetables begin to soften and the broth develops flavor.
3. Add Noodles and “Chicken”
Stir in noodles and the vegan chicken substitute or shredded jackfruit.
Cook 8–10 minutes until noodles are tender.
4. Finish the Soup
Stir in fresh parsley and a squeeze of lemon juice if desired.
Taste and adjust salt and pepper.
