Vegan Mushroom Wellington

Vegan Mushroom Wellington

Ingredients (Makes 4 Individual Wellingtons)

Mushroom Filling

  • 2 tbsp olive oil

  • 1 small onion, finely diced

  • 3 cloves garlic, minced

  • 2 cups cremini or portobello mushrooms, finely chopped

  • 1/2 cup walnuts, finely chopped

  • 1 tbsp soy sauce or tamari

  • 1 tbsp balsamic vinegar

  • 1 tsp fresh thyme (or 1/2 tsp dried)

  • 1/4 cup breadcrumbs

  • 2 tbsp fresh parsley, chopped

  • Salt and black pepper to taste

Pastry

  • 1 sheet vegan puff pastry, thawed

  • 1 tbsp plant milk (for brushing)

Savory Herb Gravy

  • 2 tbsp vegan butter or olive oil

  • 2 tbsp flour

  • 1 1/2 cups vegetable broth

  • 1 tsp soy sauce

  • 1/2 tsp thyme

  • Salt and pepper to taste


Instructions

1. Prepare the Mushroom Filling

Heat olive oil in a skillet over medium heat.
Add onion and cook 4–5 minutes until softened.
Stir in garlic and cook for another minute.

Add chopped mushrooms and cook 8–10 minutes until they release moisture and become deeply browned.

Stir in walnuts, soy sauce, balsamic vinegar, thyme, breadcrumbs, parsley, salt, and pepper.
Cook another 2–3 minutes until the mixture becomes thick and cohesive.
Let the filling cool slightly.


2. Prepare the Pastry

Preheat oven to 400°F (200°C).

Roll out puff pastry and cut into 4 squares large enough to wrap the filling.

Place a scoop of mushroom filling in the center of each square.
Fold the pastry around the filling and seal the edges underneath.

Place seam-side down on a parchment-lined baking sheet.
Brush tops with plant milk for a golden finish.


3. Bake

Bake for 20–25 minutes until the pastry is puffed and golden brown.


4. Make the Herb Gravy

Melt vegan butter in a saucepan over medium heat.
Whisk in flour and cook 1–2 minutes to form a roux.

Slowly whisk in vegetable broth, soy sauce, thyme, salt, and pepper.
Simmer 5 minutes until thickened.


5. Serve

Place each wellington on a plate and spoon the herb gravy around it or underneath, just like in the photo.
Garnish with chopped chives or parsley.


💡 Chef Tip:
For an even deeper flavor (similar to the filling in your photo), add 1 tablespoon tomato paste and a splash of red wine to the mushrooms while cooking.
