Vegan Dill Potato Salad

Ingredients (Serves 4–6)

  • 2 lbs baby yellow potatoes or Yukon Gold potatoes

  • 3 tbsp olive oil

  • 1 tbsp Dijon mustard

  • 1 tbsp apple cider vinegar or white wine vinegar

  • 2 tbsp fresh dill, finely chopped

  • 2 tbsp fresh parsley, chopped (optional but matches the look)

  • 2 green onions, sliced

  • 1 tsp salt

  • ½ tsp black pepper


Instructions

1. Cook the Potatoes
Place whole potatoes in a large pot of salted water. Bring to a boil and cook 15–20 minutes until fork-tender.

2. Cool and Cut
Drain and let cool slightly. Cut into large halves or quarters (the photo shows chunky pieces).

3. Make the Dressing
In a small bowl whisk together:

  • olive oil

  • Dijon mustard

  • vinegar

  • salt and pepper

4. Toss the Salad
Place warm potatoes in a serving bowl and gently toss with the dressing so they absorb the flavor.

5. Add Herbs
Sprinkle generously with fresh dill and green onions, lightly mixing so the herbs coat the potatoes.


Optional Add-Ins (Still Matches the Style)

  • Thin sliced radishes

  • Capers

  • Lemon zest

  • A small spoon of vegan butter melted into the dressing for extra richness

For the best flavor, dress the potatoes while they’re still warm—they absorb the vinaigrette much better and taste richer without needing mayo.
